Tiramisu
Our homemade tiramisu, the coffee flavoured Italian dessert is a staple on our menu.
Prep your station
Ingredients

Step 1
Shake it first, mix the egg yolk 40ml with 40g sugar cane using a kitchen aid for a total of 8 minutes, first 2 minutes use a higher speed then a lower one.

Step 2
Mix 360ml double cream in a high speed food processor for about 45 seconds until it becomes hard, similar to mascarpone. Place in the fridge.

Step 3
Whisk the egg white until it becomes frothy.

Step 4
Mix the ingredients in step 1 and 2 together and gradually add step 3 with a spoon until all well mixed clockwise.

Step 5
Place a 1cm layer of the mix in the bottom of the serving plastic clear tray.

Step 6
Dip each Savoiardi biscuit into the coffee (coffee must be below 20 degrees) mix for less than a second and leave it to drain, place on top of the mix in a line, use 8 biscuits for each layer.

Step 7
Add another layer of mix and another layer of biscuits, then add the final layer of the mix.

Step 8
Keep refrigerated at least 2 hours before serving.
